After my trip to Greece this summer, we ve revamped this meal a touch! A Flavorful healthy combo of Mediterranean seasoned organic chicken thighs (seared in tapioca flour and avocado oil), a side of lemony couscous,  and a mix of roasted fresh cauliflower and red pepper- with a side of red pepper hummus. Topped with fresh herbs, olives, cumumbers, pickled red onion and a sprinkle of feta!
